Vegan Spring Rolls with Peanut Sauce

- Rice noodles
- Rice paper
- Soy sauce (to marinate the tofu)
- 1 Cucumber
- 4 Carrots
- Salad (such as iceberg lettuce)
- Cilantro (optional)
- Olive oil
This is how it's done:
First, cook the rice noodles for 3 minutes and then let them cool a little before using them. Then cut the tofu into 1cm thick slices and then into smaller pieces. Put some soy sauce on a plate and marinate the tofu in it. Heat a pan with some olive oil and fry the tofu on all sides until it has a nice brown colour. Put the fried tofu on a sheet of paper towel and let it drip off the oil a little. For the rest of the spring roll filling, peel the carrots and cut into thin strips. You don't need to peel the cucumber, just wash it well and cut it into fine strips, as the skin contains many important vitamins. Cut off a third of the lettuce head, wash it well and let it drain. Then cut the leaves into strips. If you choose cilantro, wash it and pluck the leaves from the stem. The cutting should be done by a parent or babysitter, as it is easy to injure yourself with a sharp knife.
Put water on a flat plate so that it is almost completely covered. Take a sheet of rice paper, dip it in water and let it soak for 3 seconds. Then place it on a clean surface such as a plate. Caution: As soon as the rice paper comes into contact with water, it starts to become sticky. Place some rice noodles, cucumber strips, carrot strips, lettuce, tofu and possibly cilantro on the lower side of the paper. Note that the more filling you use, the harder it will be to roll. To roll the rice paper, fold in the left and right sides, but do not overlap in the middle, and then roll your paper from the bottom to the top. When you do this, make sure you keep the filling compact so that it is easier to roll.
- 3 Tbsp Peanut Butter
- 2 Tbsp Soy Sauce
- 10 Tbsp Water
This is how it's done:
Put all the ingredients in a bowl and stir gently. If your sauce is too thick, add more water. However, the more watered down it becomes, the more difficult it is to absorb when dipping the summer rolls.
And you're ready to go! You can vary the vegetables according to your child's tastes. They also taste great with fruit as a filling, without noodles. Serve with a fruit or chocolate sauce.
